Banana Pepper Omelet

6-8 Big Banana Peppers
1 Medium Sized Onion [ green top included ]
1/4lb Diced Ham [1/4 in cubes ]
1 Tbsp Olive Oil
1/4lb Shredded Cheese
4 Eggs

Instructions:
Chop peppers in 1/2 in slices, chop onion in 1/4 in slices. Sauté peppers, onions, and ham on medium heat till tender using the olive oil. While sautéing I sprinkle a dash of pepper on the mix. Whip eggs with a fork in cup or bowl till they are blended well adding a dash of pepper to the eggs as well.

When the peppers are tender pour eggs into pan and stir gently till eggs are cooked.

When the eggs still have a little bit of gloss on them I sprinkle the shredded cheese evenly over the omelet - cover the pan with tight lid for a min or so, then eat!

About 2-4 servings

Tips: The aroma of your sauté mix will start smelling really good, that's when I add my eggs. Sometimes I also add chili powder or even a bit of hot pepper to add some spice.

Fried Rice
I like this because you can add what ever veggies you want in the amount you want. One of these days I will get up the gumption to add cauliflower.

Fried Rice, though it is not fried
4 cups Brown or Basmati Rice, cooked(I like Brown Basmati best as it has a nuttier flavor)
1 Onion, chopped(I use 1/2 onion)
4 Garlic cloves, minced
2 Carrots, minced
3 Stalks Celery, chopped
Olive Oil
Opt: Cabbage, thinly shaved (red or green), thin spears of Zucchini or Summer squash, small Broccoli and Cauliflower florets, Spinach ribbons
1/4 cup sesame oil
1/3 cup Braggs Liquid Aminos
Crispy Almonds, opt
Sesame Seeds, opt



*for the sesame oil and the Braggs I take my 1/3 cup and fill it mostly with the oil and the rest with the braggs. I do not like the strong taste of the braggs so I limit it. Jared then adds more when he has his own on his plate. If it is too dry add more oil.

I also like to put in chicken pieces and top with Black Lava Salt

Saute onions, garlic, carrot, and celery with olive oil in a large pan. Add other vegetables as desired. Add 1/2 cup water to barely steam the additional veggies for 2 mins.

Layer the rice over the veggies, cover with a lid, the added water will steam heat the rice. Watch that it does not stick to the bottom of the pan. Add water in small portions if needed.

When rice is hot, drizzle the sesame oil and the Braggs over the top. Top with toasted crispy almonds and a sprinkle of sesame seeds.

**Since I am cooking my rice on the spot and it is hot, I skip the 2nd step and just combine everything in a bowl and mix then mix in the oils and present it.with the toppings**
